  • 1 Whisk

Ingredients
  

Tomato Bisque Soup

  • 1 small Yellow Onion diced
  • 2 ribs Celery diced
  • 3 cloves Garlic minced
  • 1 quart Turkey, Chicken, or Vegetable Broth
  • 28 oz Crushed Tomatoes
  • 1/4 tsp Cayenne Pepper if desired for spice
  • 1/2 tsp Paprika
  • 3 tbsp Jasmine Rice (or other long grain rice)
  • 1/2 cup Heavy Cream
  • 3 tsp Sugar
  • Olive Oil to sauté
  • Chiffonade Basil plus Extra Cream to garnish

Toasted Cheese Sandwich

  • 2 slices Preferred Bread I prefer sourdough
  • 2 slices Preferred Melty Cheese I prefer American or Sharp Cheddar
  • 2 tsp Mayonnaise or softened butter

Instructions
 

Tomato Bisque Soup

  • Add the diced onion and diced celery to a medium stock pot set over medium heat, season with some salt and pepper, and sweat until the onions are translucent but not browned.
  • Add the minced garlic and cook for another minute or two. Do not caramelize or brown the garlic.
  • Stir in the stock and bring to a simmer. Stir in the crushed tomatoes, cayenne, paprika, and jasmine rice. Simmer for 20 minutes or until rice is cooked through.
  • Using an immersion blender, thoroughly blend the hot soup until smooth. Remove from the heat.
  • Stir in the heavy cream and season to taste with salt and pepper.
  • Garnish with a drizzle of heavy cream and thinly sliced basil ribbons.

Toasted Cheese Sammy

  • Spread a thin layer of mayonnaise on the outer sides of the bread slices.
  • Heat a pan to medium low heat and add the first slice of bread, mayonnaise side down. Quickly add your melty cheese to this slice and top with the second bread slice, mayonnaise side up.
  • Raise the heat on the pan to medium low to medium and toast the first side of the sandwich. Optionally, ensure optimal contact with the pan by using a weight of some sort to keep the sandwich flat against the pan.
  • Flip the sandwich once it has been browned to taste. Repeat on the second side and toast until cheese is melty and bread is toasted to your preference.
